Slow Cooker Chicken Tacos

I highly recommend making these for two reasons. The first being they are so easy to make since the recipe only requires chicken, garlic, diced green chilies, onion, salsa, and ground cumin to sit in the slow cooker on low for 8 hours, and second reason is they are delicious. The chicken is so tender and shreds so easily into smaller pieces, and the juices from the salsa are absorbed into the meat so it's juicy. The only problem is that the juices made my tortilla fall apart, so I would recommend draining the meat a little bit before setting it on the tortilla. I served mine with cheese, sour cream, and lettuce. I didn't use tomatoes because there is salsa already mixed in with the meat. I will make this recipe again because it's easy to make and you can leave the house for the day while it cooks. The original recipe can be found here.


Turquoise Necklace from Fossil

I absolutely love Fossil products, and I should admit I do work part-time there currently (who could resist such a great discount). When this necklace came in a few months back you could say it was love at first sight for me. I had been wanting a large statement necklace for quite some time and this was perfect because the color scheme already went with my personal style. This is the first outfit that I wore with the necklace. I know it's hard to tell, but I'm wearing a gray blouse from LA Made, a cream tank top, and dark skinny jeans with gray wedges. I think this necklace is very versatile, even though it is a statement piece. I plan on pairing with plain white tees, dresses, and much more in the future. Banana Cupcakes with Butter Cream Cheese Frosting

Okay, I will be the first to admit that my cupcake is obviously a lot less prettier than the original, however, I would like to think it tasted just as good (maybe even better). There were a few things that I changed to save me money and time. Instead of making the cupcakes from scratch like the original recipe calls for I instead used a box mix from Betty Crocker. Also, I couldn't find any Dulce de Leche candies at my grocery store, so I opted to melt small caramel candies and drizzle it over the cupcakes. In theory I thought this idea was a great alternative, however, I didn't really think it through and the caramel hardened quite a bit. Although, the caramel still tasted quite good, it was hard to eat and came off in chunks so you didn't exactly look graceful while eating it. If I were to make this recipe again, I would find Dulce de Leche candies, and use a frosting utensil so the cupcakes look prettier. However, I think my use of the box mix for the banana cupcake was a good idea because it saved me time and was less expensive. The original recipe can be found here.
